What a knife should be

[This review was collected as part of a promotion.] I've been a home cook for years and finally decided to splurge on a premium set of knives. After a week I'm shocked by how accurate and fine my cuts are without making changes to my technique. I should have picked these knives up years ago.

High Level Simplicity

[This review was collected as part of a promotion.] In spring and summer I do a lot of small fruit prep like strawberries. A quality paring knife is the tool for the job, but for me, many western style handles leave my hand feeling fatigued. The handle on the Koh is a Japanese style and I've found it to be so much more comfortable when using for long periods. The AEB-L steel is high quality and is easy enough to maintain.

All around perfection

I love the ergonomic pakka wood handle, light weight, how sharp and glossy the Damascus edge is. I was able to score my sourdough with it, no scalpel required. It is beautiful and functional; cleaning chopping and cutting small fruit and veggies is now enjoyable and these are the little things that take up the most time on n cooking and make the big difference for the final outcome in any meal.
