I have found that the paring knife is one of those knives that I need to always have on hand and within close range of my work area. I bake a lot and use this for peeling all the fruits quickly due to how sharp this line is. I use it on smaller vegetable as well, but the majority of its life is spent peeling fruit for pies, jams, tarts, cakes, etc.

The Koh line is a forgiving entry into Japanese Cutlery. Similar to a few other Miyabi lines, it works for both the right and left handed chef. The slightly softer steel makes this knife edge easier to maintain and is less susceptible to damage to the cutting edge.

Unique octagonal handle suits every chef. Hard steel hand honed in Seki, Japan...capitol of samurai sword prowess!! Small & quite nimble..

Beautiful and sharp

I love the design of the Koh knives because the handles are so unique. The octagonal shape feels great in my hand and is very comfortable. The paring knife is so sharp and I use this knife to peel apples and garlic.
I would recommend this to a friend!

I love how this knife feels in my hand. I like to use it for shaping and peeling. The hexagonal design gives me a good grip while still being very comfortable. The forged Japanese blade goes through a double hardening process making a very strong, resilient and sharp blade. The sharpness is easy to maintain as well when the time comes. The acute angle of the blade allows me to trim with ease without unnecessary waste.

Sharp- but not unique

[This review was collected as part of a promotion.] I just got the knife and compared it to my ceramic knife and my Henkel knife that I have had for years. It works admirably but not significantly different than the others. It does have a nice hand feel. I do have some concerns about keeping a sharp because of the type of blade angle. We will see.
