So far, so good! Gave to my parents for Christmas and we've all noticed an im provemebt from previous pairing knives. Cuts beautifully.

I was trying to replace my Henckels 4” PROFESSIONAL “S”, FRUOIDUR ice hardened, 31020-100 (4”) NO STAIN, FROM SOLINGEN GERMANY. I was surprised when the knife I ordered is a HENKELS, classic, 31160-100 4” GERMAN STEEL, MADE IN SPAIN 42ZS62. The weight and hand feel of the two knives is very different (Professional - .069kg, Classic – 059kg). I was unable to locate a similar knife to the PROFESSIONAL via the US accessible Henkle website. I hope the new knife holds up as well as my Professional did and am sorry the market has driven to what feels like a lesser quality 4” knife.
