This beautiful prep knife is ready to tackle any medium-sized prep task. With the unique birchwood handle perfectly balancing out the knife, it is important not to expose it to too much water to avoid the wood from cracking. Durability meets long lasting sharpness with the strong Damascus blade so you won't have to worry about sharpening this knife for a long time.

I love this prep knife. The blade is beautiful, with 100 layers of steel, it is an amazing piece of art, and it cuts so smoothly, like butter. The birchwood handle feels so nice in hand, and looks perfect with the blade. This is a great size blade if you want a smaller knife but still be able to slice and chop food on a cutting board. Miyabi makes wonder and durable Japanese knives, definitely one of the best prep knives on the market.

I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. And this compact prep knife is so convenient. It does small scale cutting swiftly and fluidly, but can be used on larger cutting and boning as well. What a joy!
