Just right for my wife's hand

[This review was collected as part of a promotion.] We have the small 3.5in paring knife and the 6in chef's knife. Both work well, but one is too small for most vegetables, and the other is too big for my wife's smaller hand. The 5.5in prep knife is just right for her. The shorter blade makes it easier to hold and the lower profile of the blade makes it easier to slice through vegetables than the 6in chef's knife.
I would definitely recommend this knife

Great home knife

[This review was collected as part of a promotion.] I got this as my second personal knife for my kitchen. Is super sharp and gives a little extra touch of imagery with the design. This knife isn't for everyone but still in my eyes was a really good everyday knife to have.
No, I would not recommend this to a friend.

Perfect for quick cuts. The core is made from FC61 Steel creating a blade that keeps it sharpness. Handle is a rounded D sharp that is comfortable in all hands. The Damascus pattern creates one beautiful knife!

Great Japanese prep knife

This is a really great Japanese Prep knife. The Kaizen II has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 48 layers of FC steel, you can really feel how much of a difference that makes when cutting fish, meat or produce. A great prep knife to have in the kitchen.

Redesigned Kaizen II is a hit!

If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning.
This prep knife is pretty stunning. It does fine work, like shaving and super thin slices cleanly. It can easily bone out and skin fish. Love this knife.

This Kaizen II shotoh is a great inbetween sized blade. Longer than a paring knife, but more maneuverable than a chef knife, it is perfect for doing medium size task. Striking 49 layer Damascus pattern blade and Pakkawood handle with larger bolster for added comfort.

perfectly shaped and sized for cutting vegetable, fruits and meats. I like to use this knife for slicing fruits for my pies. This knife will slice consistently and perfectly. Forget about your mandoline- Slice the thinnest onion( without crying).
