Very Flexible

My husband is an avid fisherman, and we have been through our share of fillet knives. The Pro 7 inch Fillet knife is in a class of its own. The special formula steel is so durable that it can withstand the flexibility needed to skin trout, blue fish and get through and around all the soft bones. Really like the one piece construction and the full tang which makes it so durable. Looking forward to many years of use.

Love the new knife, had some Rockfish to do and the local fish guy cries like a baby if you ask him to remove the skin. Watched Jacques do a Flounder / Sole on video and went for it. The knife has just the right flex for me and was plenty sharp from the factory. The handle and weight works in my hand perfectly as well. Jacques would be proud, great knife so far.

A tad bit expensive but worth it
