First used it in a Fish Cooking Class!

[This review was collected as part of a promotion.] I had never filleted a fish in my life, but with guidance from the Chef Instructor, the trout fillet turned out very well! Here it is with Israeli Couscous with Tomato Buerre Blanc Sauce. So I bought this knife! Looking forward to not being afraid of whole fish!
LOve this knife. So easy to remove skin from fish!

Smooth cut!

Amazing product! I used this fillet knife to cut the skin off my fish... you can bend it to your liking and it helps make a smooth cut!

If you're looking for a fillet knife, this is the best option! I love the unique curved bolster on this Pro knife as it allows for complete comfort and control while filleting the finest fish!

Fine Fillet

When cutting fish, this long flexible knife will allow you to get as close to the bones as possible. Also excellent for skinning tomato wedges or supreming citrus fruit. The curved bolster on the Pro series promotes the pinch grip for added control. A very fine fillet knife.

Great skinny blade

This is a great knife for really getting those thinly and closely sliced cuts on meat and fish and even fruit. Nice longer blade than a boning knife, so that way I can make less cuts with a larger blade.

Thin is best!!

I don't often use this knife, but i do like it for my smoked salmon and other fish dishes where I need super fine slices or need to skin the flesh from a fillet. The grip is sturdy which I need for such a flexible, long blade. I recommend you have one in your tool box!
