Love the combo of a German/Japanese knife - gives you the best of both worlds! The Nikiri is a newer addition to the Evolution series and it is a must-have! Can be used in place of the Chef or Santoku and cuts all veggies and meats equally well. Nice to know craftsmanship takes 42 days to make a knife like this! Speaks for itself.

Perfect Gift for Knife Lovers

I bought this knife for two of my sons for Christmas. Both love to cook and one works in a restaurant. They love it and use it every day.
The Nakiri is such a great blade shape and with it's scalpel-like edge, it can make light work of any chopping task. Prior to this gift, I had never given them a Japanese knife because I was worried they would chip the blade. But Evolution is made of FC61 steel which is very durable and chip resistant.

This beautiful Nakiri does an amazing job on any chopping, cutting or slicing job. It is made from FC61 steel which insures its hardness but it is ice hardened to make it durable...no chipping or cracking. This is made in Japan and has the traditional thin blade to ensure the finest slices.

This Miyabi Evolution Nakiri is exactly what everyone needs in their kitchen. This knife is so sharp that I actually enjoy cutting tough veggies. Prep becomes seamless. This handle is very much a German style handle which is why I love this knife. It is a good mixture of the sharpness of a Japanese knife and the handle of a German knife. There is no doubt this will be a purchase you will love.

I gave this knife to my cousin and his wife since they were looking to start using 'grown up tools' in their kitchen. The kids were old enough and they just decided it was time. He thanks me every time we see each other, and occasionally I get pictures of something they have cooked. This is that kind of knife, it inspires love and cooking creativity. It is a hybrid of Japanese and German knife making tradition. The handle is a perfect example. It is a little heavier like a German knife, but a little narrower like a Japanese knife. The steel that the blade is made of is German and the craftsmanship is Japanese. The combination is a hard durable blade that stays sharp for a long time. Hone it regularly and sharpen maybe once a year; you'll have it forever.
In this case the shape of the knife is all Japanese. The nakiri is an excellent chopping knife. It cuts up meats and vegetables easily. Great for vegetable-centric diets. Dishwasher safe, but hand wash to retain the beauty and look of new.

Forged, Japanese honed winner. Chops and rocks. Hard, tough steel is a chefs favorite. To say it's sharp doesn't do it justice!

The best knife you've never heard of

I had not heard of a nakiri knife until recently and I don't know what I did before I got this great knife! I cook vegetarian a lot and this knife is great to get through all the vegetables that I cut up every night. I also love the wide blade that makes it easy for me to transfer the vegetables from the cutting board to the pan with ease. The handle is super comfortable and the knife is very sharp.
