Pro S is the traditional German knife. High quality steel and forging assure you that it will be sharp and stay that way.
A boning knife is an essential kitchen tool especially in dealing with chicken. The flexible blade makes easy work of getting all the meat off of the bones.

My favorite Western-style boning knife

I really like the weight and balance of this knife. It is easy to maneuver around bones. It also holds an edge extremely well.
Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a looks almost new.

Very sharp and comfortable grip

[This review was collected as part of a promotion.] First off, I love the customer service, had an issue with the 1st knife and they resolved. Secondly, the knife is sharp and I’m able to maneuver effortlessly. The comfort of handle was very important and I did a lot of research online to pick the best boning knife.

This is a fantastic option if you are looking to add to your collection or replace an older paring knife. The Pro S line of knives is remarkably well balanced and the flexibility of this boning knife makes it so easy to tackle that tedious task.

Great boning knife

This is a knife I didn’t know I needed until I used it. I always thought this was really supposed to be used for just fish or chicken, but you can use this knife for so many other purposes! My friend showed me how to peel fruit with it like oranges and that was a game changer! It cuts so cleanly and with it’s thin profile you can really get a nice slice, whether it’s removing meat from a bone, or skin from fruit or fish, it’s a knife that can be really handy to have in the kitchen when you need it.

Perfect knife for poultry and meat. The thin narrow tapered end of the blade permits greater control as the blade works around muscle and bone.

Flexibility at its Best

I just took apart a pork butt and used this knife for the whole process. It was able to get between the shoulder blade and meat beautifully and we all know that bone work can be tricky. Although flexible the knife is durable - it has a life time warranty.
