This rocking santoku is made from VG10 super steel. Needless to say, it is very sharp at the Asian angle. I love that this santoku is curved ("rocking") because it helps me to rock while I chop. I highly recommend this beautiful knife!

Sharp for cutting and looking at!

This is a stunning knife that I use as an all purpose knife and I feel like my food is more beautiful just for cutting it with this knife! I love the pattern on the blase and the handle is comfortable and beautiful. I ovals on the side of the knife make it so that vegetables don't stick while I'm cutting.

Great steel, great balance...has it all. Hollow edge to cut down on food-sticking helps you work quicker. Nearly indestructible handle.

The Santoku is one of my favorite blade profiles and I always have it close at hand when working in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with the D-shape handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the VG10 super steel and the special ice-hardening process.

I saw the rocking santoku design in the Pro line a while back. Im so glad they added it to the Kaizen line. All the great parts of the Kaizen products are here....Micarta handle, VG10 damascus style steel and a great cutting edge.The rocking shape combines the chefs knife and regular santoku. It makes quick work of my minces and breaking down my aromatics. A great product.

Sharpest knife I ever had

[This review was collected as part of a promotion.] I have 2 zwilling knives before getting this santoku knife. But this one is the sharpest by far in all my knives. I can even cut off water melon peel effortlessly. I never put it in dishwasher but it’s quite easy to clean. Do remember to wipe off the water before putting back in storage.
