Favorite knife

This is probably my favorite knife that I own. I love the Kaizen collection, I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also more subtitle in comparison to some other Miyabi blades. I love this rocking santoku, it is the perfect all purpose knife. Don’t have a chef knife, no worries you can use this knife. Need to mince herbs and garlic? This knife is a workhorse in your kitchen for all sorts of tasks, mincing, slicing, chopping. The handle feels great in hand, contours nicely and the transition from handle to blade is comfortable. I love how durable this knife is, and that I can enjoy this very sharp Japanese knife for years to come.

This knife is a perfect marriage between a chef knife and a santoku. VG10 steel retains a great edge. The knife is a little handle heavy but still feels good.

The rocking santoku with hollow grooves is a the best of both worlds. Santoku knives are popular in Japan, and the arced blade and hollow grooves are very Western. Combined, this knife is great for most of the cutting requirements you have. The Kaizen line with it's multilayered blade with Damascus design is exceptional. Both beautiful and strong. This is a knife that will hold its edge and last a lifetime.

The Miyabi line and the Kaizen series is one of a kind series and knife that you will want to purchase and have more than only the hollow-edge Santoku. This knife will perform any job and the rocking motion is perfect for your veggies and for this curved blade! The hollow edge will make your veggies not stock, so no wiping clean with your fingers. Handle looks like wood, but is linen Micarta and feels so comfortable.

This knife is for those of you that want a stable and beautiful Japanese knife that functions both as a Santoku and a Chef.
Extremely chip and corrosion resistant perfect for all types of slicing and dicing.

Beautiful and Functional

This Kaizen rocking santoku is a great addition. I love the versatility of a rocking santoku in that I can rock or chop with an amazingly sharp edge. The VG10 steel and 46 layers make it sharp, beautiful and durable. As is true with all Miyabi knives, they are made and sold as premium knives in Japan, a true testament to their heritage.

The core of this knife is made from VG10 steel meaning it can be honed into a super sharp 9.5 degree angle and achieves 60 on the hardness scale so the edge is razor sharp and stays that way. This blade combines a gorgeous damascus pattern with the hollow edges that allow food to fall away rather than stick to the blade as you slice.

I absolutely love love love my VG 10 steel Kaisen knife set. It is unparalleled for quality, beauty and extreme sharpness. I didn't realize I was missing anything, until I saw this new shape... Cutting and chopping with a rocking santoku is a whole new world. While a Chef's knife has a long list of attributes, and a Santoku fills another need, the rocking santoku covers such a wide area of knife skills! Its great to use while entertaining, fun to use fun to watch and glides effortlessly thru so many tasks!
