The rocking santoku is one of my favorite knives in the kitchen and this Birchwood version makes it functional and stylish. The strong Damascus steel promises long lasting sharpness and effortless cutting while the beautiful birchwood handle is extremely comfortable in the hand. Be sure not to expose the wood to too much moisture/water to avoid the handle from cracking.
I love this knife. The blade is beautiful, with 100 layers of SG2 steel, it is an amazing piece of art, and it cuts so smoothly, like butter. The birchwood handle feels so nice in hand, and looks perfect with the blade. This knife is the perfect all purpose knife, you can chop, slice, mince with this blade. Miyabi makes wonder and durable Japanese knives, definitely one of the best rocking santoku knives on the market.
I fell in love with this Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy.
The ricking santoku can easily become the most used knife in your kitchen. It give you the best of a western style chef's knife and the stability of a santoku. Worth consideration no matter your cutting style.
[Employee of zwillingonline] I've had this knife for awhile and it is still my go to knife. The edge has remained very sharp. I use it for chopping, slicing, mincing and enjoy doing these tasks I used to loath. It has made be a better chef.
