Artisan is wonderful line within the Miyabi collection of Japanese kitchen knives. The hammered outer layers protect a strong durable center core blade. the handles are thicker in the middle making this more comfortable for both right and left handed users.

Great overall prep knife

I received this knife as a gift in the MIZU line. Apparently it is the same as the Artisan except the handle is a little different. This knife is perfect for general peeling, chopping and dicing. It fits perfectly in my hand and makes short work of everything I have used it to make.

Great utility knife

This is a great Utility knife. It for one is beautiful. The hammered Tsuchime finish really makes such a big difference when chopping or slicing produce or starchy foods like potatoes and not sticking to the knife. I like how this is such a sharp blade thanks to the ice hardening aspect. The Cocobolo wood D-Shaped handle fits perfectly in my hand and makes for a comfort experience as I chop and cut produce. The knife is sharp and durable, what more can you want in an Utility knife!

This Artisan utility knife kicks butt in the kitchen. I love how comfortable the handle is and the hammered steel blade is incredibly durable and sharp, easily cutting through any food.
