Best prep knife ever!

Undecided at first, but love the Nakiri Knife

I was very undecided when I first saw this knife. But kept coming back to look again and again. I wasn't sure what I'd use it for as I have a number of great knifes that I use to chop vegetables. When I finally decided to go for it I found it to be on back order. So I requested a notice when the knife came back into stock. It was well worth the wait. I use it now most every day to prepare salads, chop vegetables, and cut paper thin veggies for soups, sautés and just about any other need I may have for chopping. I really like how it handles carrots. This is not a cleaver but does great for thinly slicing meats for Chinese dishes. It is a bit longer than I had imagined, so visually it took some getting used to. It is sturdy and super sharp too. I am very pleased with this purchase, and recommend this to all my friends that enjoy cooking.
