This knife is made from FC61 fine carbide steel and ice-hardened twice which translates to exceptional durability, cutting edge retention, and corrosion resistance. The blade is dry sharpened creating a scalpel-like sharpness. I love the width on this blade and often turn it over to use a scraper so my prep work is uninterrupted .

I purchased these two knives 4-6 weeks ago. Was not happy with a couple of knives I'd had for a while.......so I went shopping. The Miyabi Evolution 6'' chef's knife does exactly what I want; nice long handle for my big hands. The JA Henckels Four Star 7" Chef's knife is also a very good knife. Both knives have good balance and preform well!

Just the right size chef knife!

Evolution knife is exceptionally sharp, a medium-size and versatile knife. This knife size is not daunting for me and more comfortable in my hand better. It is slightly bigger than the prep knife. It is enjoyable to cut and slice everything such as fruits, vegetables, meat, poultry, butter, cheese and even bread. Evolution knife is made from revolutionary fine carbide FC61 steel, these knives offer the signature sharpness for which Japanese knives are known. Hand washing is recommended.

I love the feel of a 6" Chef knife as it is much easier to handle in my smaller hands. Miyabi knives are superb knives with German engineering and made by Japanese artisans. What could be better? The mirrored finish on the blade of this series is especially beautiful and is in direct contrast to the black handle. Japanese knives are known for their thin blades, tho will not chip or rust. Amazing knife for all your kitchen tasks!

The chef knife is the most used knife in the kitchen so you want that knife to be comfortable in your hand, you want it to be sharp and you want that sharpness to last. Miyabi Evolution is made of FC61 and it goes through a special hardening process which makes the knife hard, durable and sharp. This knife is not only beautiful but also an example of what a great Japanese knife is made of.

Evolution is a blend of eastern and western styles of cutlery. The appearance, edge angle and blade profile provide the look and efficiency of Eastern cutlery. The ambidextrous 3 rivet handle and the forgiving steel bring the Western advantage. The steel can be easily honed to sharpness and is very nick and chip resistant, literally bending before breaking if it runs into something too hard.
