Excellent balance and comfortable in the hand. Edge is razor sharp and retains sharpness nicely. Sharpening these blades properly is a challenge, but the challenge is worth it—just be careful not to damage the edge. Obviously, these are beautiful pieces of craftsmanship. grazie mille Miyabi

This knife fits perfectly in my hand and is nicely weighted. I am a little sad that the packaging is significantly lower quality than what I got when I ordered products about a year ago, but the quality of the knife is great, from what I can tell.

I just received the Miyabi Birchwood paring knife, and even with limited use I can tell it’s going to be a favorite pairing knife yet. The balance feels spot-on in my hand, and the fit and finish are exactly what you’d expect. Until this arrived, I didn't realize how much I needed a quality knife of this size.
I reach for it when I need more precision than my chef’s knife gives me, and it’s been incredibly sharp right out of the box. Early impressions are very positive, especially for detailed prep work.
