These are incredible steak knives. Not only are they beautiful but they have scalpel-like sharpness.
True to the Japanese knives they have a very thin blade and a small edge angle making them one of the sharpest steak knives out there. They are made from SG2 steel which is extremely hard which will help these knives stay sharp. You cannot beat the look and feel of the birchwood handle. The rounded wooden handle is very comfortable and will make a statement on any table.

These steak set has the blade features a Katana edge, it is scalpel-like sharpness and comfortably in the hand. The Potent core of SG2 micro-carbide powder steel is protected by 100 layers of steel, hand-honed using the traditional 3-step Japanese Honbazuke method. 5000MCD, Cryodur ice-hardened; 63 Rockwell hardness. Flower Damascus pattern provides added durability and provides barrier between the food and the steel, preventing from food sticking into the knife. Ergonomic MIYABI Birchwood knives feel as good as they look.

Best gift ever!

[This review was collected as part of a promotion.] These are outstanding in every regard. They’re nice to hold, look wonderful for presentation, and carve right through anything. My only complaint is that I get a super guilty feeling when I use these on my cast iron plates. I know I’m just slowly ruining this beautiful edge. Wife got these for me as a gift and she now has a get out of jail free card on credit.

These steak knives are absolutely stunning. Beautifully crafted in Seki Japan, they have a traditional D shaped Birchwood handle, and have an SG2 inner core, which is protected with 100 layers of authentic damascus design. Stays unbelievably sharp, and glides through beef, pork and poultry. You will definitely see these knives coming and going. Always get raves when my guests use them.
