Excellent cookware excellent pot. Whats not to like? This pan heats quickly, has excellent heat retention, boils and cooks evenly and clean up is a breeze thanks to it being rivotless. I suppose you should use this pot for sauces but I use it for grains, tempering chocolate, making caramel sauce and morning hot cereals. Just a joy to use and have in my kitchen.
Demeyere is definitely Professional Quality; the 7 layer pan cooks beautifully and the pan always looks like new. Whatever I use it for everything is fantastic.

For me, this saucier is everything you need to be a rock star pastry chef! Although there are other uses for it... I use this exculsively for melting chocolate, making caramel sauce and pastry cream. The rounded , heavy bottom allows for even and fast melting.
This pan is perfect for making delicate sauces, rice, soup, and pasta. The pan heats up fast and holds the heat. Clean up is a breeze I just use my sink sprayer and everything comes right off.

This is one of my favorite shapes. A saucier is invaluable if you make sauces and gravy, or if you make pastries. The conical shape is ideal for gentle reduction in moisture/volume and condensing flavors. Atlantis sauciers are awesome to work with because if you are like me, and can get distracted, it is so forgiving. I don't burn my pastry creams and caramels. I scald milk, instead of overflow it. Well worth the investment.
Demeyere Atlantis. I love this stuff! It has all the best parts of high-end (copper) cookware and it’s easy to clean! In addition to being technically sound (it cooks well; heats evenly and is responsive to temperature changes), it has bonuses that help to justify the price.
No rivets - no cleaning around those annoying little screw heads. Comfortable stay-cool handles – easy to grip and lift. Looks good – shiny exterior stays that way.
This pan has a 7 ply (layers) construction. The heat moves slowly and consistently through the pan so that the contents don't burn. It will hold heat for a long period of time which make it nice to make sauces ahead of time. Or you can just heat up your soup in it.
