Super sharp. Hands-on erased any doubt.

[This review was collected as part of a promotion.] I was a bit hesitant on this one, but had my eye on it after the Kaizen sold out. I’d read it was too light, some said it cumbersome, and so on. Once I opened the box any doubt simply went away. It’s super sharp, really nicely balanced, finished very nicely. I also don’t mind the sand blasted katana edge finish that some complained about. It’s very subtle and is also no different than cladding, which is also mostly cosmetic in modern knife making.
Overall, I’m very pleased with the purchase and look forward to years of usage.

[This review was collected as part of a promotion.] Purchased this knife for work, and wow let me tell you this is the sharpest knife I’ve ever used in a kitchen or anywhere. Fits really nice in my hands I got the 9.5” because I have's larger hands and prefer a bigger chef knife. been using it for about a couple weeks now everyday and still razor sharp with just a little honing after each use. I will definitely be purchasing more miyabi knives.
[This review was collected as part of a promotion.] Was a little hesitant to get he 9.5" but after using it in the kitchen, Its perfect. The blade is nice and sharp and makes quick work of all general tasks in the kitchen. I like the shape as it lends itself to the more European style of knife rocking but still provides a good flat portion for straight chopping. The handle is excellent for pinch grip or for straight handing.
I love using this knife because of its unique and comfortable handle with an octagonal design, which fits into my hand well, not to mention the dark color. The blade is very sharp and easy to use.
The octagon-shaped handle of Koh makes it rather unique. It is surprisingly comfortable with an elongated bolster for transition from handle to blade. While lightweight the scalpel edge blade offers effortless precision cutting.
This Miyabi Koh line is so beautiful. It is made from FC61 steel, so it will be durable and extremely sharp. The handle fits nicely in your hand too.
This 9.5 chef's knife is great to have for every day tasks and ideal for someone who prefers a larger knife, since a typical chef is 8 inches. It is a very versatile knife that will definitely come in handy.
