Everything about this knife says it is the top of the line and Ithink it is worth every penny. The way it cuts through vegetables and meats is effortless and the beauty of the knife is exquisite. The core is MC66 steel which reaches 66 on the hardness scale meaning the fine edge will retain its razor sharp angle use after use. The core is protected by an impressive 132 layers to create the damascus pattern. I could not be happier each time I use it.

Made from MC66 steel, this knife is definitely a true Japanese scalpel-like blade. The handle is so unique and truly a work of craftsmanship. This santoku knife will be your favorite knife!

The Santoku is one of my favorite knives to use in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with the D-shape handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the MC66 steel and the special ice-hardening process.

Hardest, Sharpest Japanese-made Knife

Way up on hardness scale , this micro carbide, Hand honed santoku with 132 add'l wraps makes it stable and surgically sharp! Ash handles are all unique & balance is terrific.

Beauty and function

This is one of the most beautiful knives I've ever seen. Not only is it beautiful, it is one of the sharpest knives I've used. I love the wide blade of the santoku style to make it easy to move food from the cutting board to the pan and the blade has a very intricate pattern that shows off the craftsmanship that was used in making this knife.

Amazing knife

[This review was collected as part of a promotion.] I never thought I could love a knife this much! It cuts effortlessly through things like they were butter. It is so lightweight and fits my hand perfectly. I had been using Wustof knives for years, but after using this I have bought a whole set of Miyabi!

This is a great light weight knife easy mobility and use. I cook in my home 3 meals a day and depend on a good knife, Miyabi does the trick every time.
