Sharp, Balanced, and Generally a Joy to Use

[This review was collected as part of a promotion.] It slices beautifully, and I can feel how much less pressure it takes to chop—which is lovely, and also safer. The handle (while the least expensive in the Miyabi line) feels great in my hand, to the point that I'm going to have a hard time going back to a straight-ahead, Western-style handle (though of course, that's subjective). As a bonus, this is probably the least expensive way to get that beautiful Damascus look. I can't speak to how the edge would hold up in a professional kitchen, but for daily home kitchen use, this knife is pure joy.
