Very Sharp

My husband purchased this for me on Mother's Day. This is my first Japanese knife and the difference between this knife and my other knives is incredible. I had no idea Zwilling owned Miyabi, the Japanese knife company, so I was confident that I was getting everything important in a Japanese knife.
This knife is extremely sharp, and is great for slicing thin cuts of meat and poultry for stir fry. I love the traditional Japanese styled handle, as well as the Damascus steel. Chopping mincing, slicing is no longer a struggle. The blade stays nice and sharp and has not needed to be sharpened.
I also like the half bolster which is standard in Japanese knives. It allows using the entire surface of the blade when chopping, and also makes for easier sharpening, when it eventually needs sharpening. Great gift!
