A great prep knife

A great Prep blade. Super lightweight, the Koh Prep has a nice balance. The blade does a nice job of chopping and slicing produce easily and smoothly. If you’re looking for a traditional style handle and thin blade, this Japanese knife is the one for you.

If you're a leftie looking for a prep knife, this Koh one might be more comfortable for you. The knife is lightweight and the durable blade ensures long lasting sharpness.

Everything you think a Japanese knife would be

I wasn't initially drawn to the Koh in the store. When I tried it I was certain I wouldn't like the octagonal shape of the handle. But I was wrong. It's actually very comfortable. Lightweight. Super sharp. Everything you would think a Japanese knife would be. This prep knife is a great length too.

Sharp, durable and great for fine slicing work. Razor sharp edge will cut the thinnest slices of fish and vegetables for sushi or other dishes. When you want the finest, reach for the finest. the handle is a black wood with an octagonal shape. Great for maneuverability.

This knife has thin Japanese blade profile of at least a 9.5 edge angle, can cut delicate skin of tomatoes, fruits and will effortless cuts through large chunk of meat and vegetables.
An FC61 prep knife with a fine carbide stainless steel of 61 Rockwell hardness is an outstanding, a scalpel-like sharpness knife. This knife is exceptional durability, cutting edge retention, and corrosion resistance.

Koh's octagon shaped handle is surprisingly comfortable with an elongated bolster for transition from handle to blade. The knife is lightweight and the blade has a well rounded heel and spine providing effortless precision cutting for all your prep work.
