If you want a special knife for those special carving occasions like your holiday roasts definitely consider investing in this beautiful knife. Designed by Bob Kramer the master knife smith you're hard pressed to find a nicer more beautiful knife. The core is made from FC61 steel which is one of the hardest steels available and then wrapped in an additional one hundred layers of stainless and nickel to create the unique damascus pattern. You will achieve the most effortless thin slices of roast with this knife not to mention using it for fajita meat slicing, cutting ribs or even special occasion cakes.

If you’re gathering with family on holidays throughout the year and creating a king size buffet with a great roast, turkey, or ham as your center piece; then this is the knife you want! Not only will you be using it, but your left-handed family member will be able to use it with the same comfort and ease... not to mention, as beautiful as it is, it’ll be a great conversation piece all around. The layered Damascus, and beautifully carved wooden handle is incredible.

The Meiji blade is not only beautiful but strong and flexible. Its made from FC61 steel and known for its ability to hold a sharp edge. I ordered it for the holiday celebrations and have come to use it all the time. The handle is unique and has a rounded D shape which is really comfortable.

Comfort and Durability!

Meiji collection knife has wide blade, even a slicing knife. It is outstanding for large size food cutting and slicing for meat, vegetables and fruits. I liked this 9" slicing knife wide blade, because it is less effort for me to go in and out cutting and slicing when prepping food and when serving a sumptuous dinner roast meat. Meiji knife potent core of FC61 fine carbide stainless steel is protected by 100 layers of nickel and stainless steel. Blades offer remarkable durability, sharpness, and cutting performance. The ergonomic charcoal Pakkawood handles is more comfortable for left handed cook. Damascus pattern on the knife blade provides added durability, helps prevent food from sticking.

Nice sharp slicer knife

This is a really unique slicer knife. The handle shape really fits perfectly in the palm of my hand, a shape that I’ve never seen in another knife collection outside of the Meiji. With it having 100 layers of FC61 stainless steel, this knife slices so smoothly and beautifully. It looks great and is a solid Japanese knife.

What a knife. The length of the blade, the substanstial handle. Great comfort. The steel has a one of a kind damascus detail. It is super sharp and has remained sharp. Another great line from Bob Kramer!

Striking Slicer

This striking 101 layer Damascus patterned thin blade with acute edge angle allows clean slices in a single stroke. The D-shaped Pakkawood handle has a more pronounced ridge allow for a better grip and controlled carving.
