Amazing quality. The layered blade has a gorgeous damascus detail in which no two knives are alike. The handle is beautiful. But aside from the aesthetics of this line, the performance doesn't compare. It is so super sharp. I've never experienced such a sharp knife. I love the length of the 5" santoku. Perfect for chopping with my smaller hands.
The Miyable Black blade is made up of a center MC66 core with 133 layers of steel surrounding it. This knife is scalpel sharp, you will be amazed. It will slice through anything even the toughest vegetables and any meat as well.
What a beautiful Japanese knife. I love how sharp this blade is, it chops anything like it’s butter. With the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. The black ash wood handles accents well with the blade aesthetic. These are some of the best Japanese knives on the market. The santoku knife is a nice in between size, smaller in length, but still a wide blade to chop through produce easily.
Whether you've got Miyabi black knives already or not, this 5.5" santoku will make a nice addition to your collection. The beautiful handle is extra comfortable and the Damascus blade promises long lasting sharpness, resulting in an overall fantastic knife.
This knife is worth every penny. The cutting ability is a dream, it is comfortable to hold in my smaller hands, and the beauty of the knife is exquisite. Everything about the knife screams top quality. I could not be happier. I also purchase the Miyabi Black honing steel in order to keep the very hard steel of this knife sharp at all times.
