Artisan is a thing of beauty! The first attraction for me is the "hammered" blade; it's such a unque finish but it's also going to help keep food from sticking to the blade. The SG2 steel is very hard which guarantees it will have amazing edge retention. It also boasts that crazy sharp Asian edge angle.
The rosewood handle has a nice round curve which fits very comfortably in your hand.
A prep knife is such a great blade. It can handle those tasks that are too big for a parer but using a chef knife would just be overkill.
If you are wanting an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

A great Prep knife

I love the look of this knife and how it has certain features that make it a true Japanese knife, like the mirrored finish aspect to the blade and the shape of the handle. I like that it’s a Cocobolo wood, really beautiful look that accents the blade perfectly. This prep knife slices and cuts through anything with ease and smoothness on a cutting board, clean slices every time. It has a nice balance to it as well, and contours nicely in your hand. The steel is really solid for a Japanese knife, so I’m not worried about it chipping down the road.

Fabulous for fine work and cutting

I love these prep knives for the smaller, finer tasks, like deveining shrimp as I did the other night. The super sharp edge cut through channel and, in the Artisan's case, the hammered tsuchime blade didn't drag the meat, it just glided right through. This is an excellent prep knife, great for slicing super thinly. I also like it to clean up meats and poultry -getting rid of the silver skin, the bits of fat. A great prep knife is worth it's weight in gold - no, worth twice it's weight.

[This review was collected as part of a promotion.] First time buying this brand. The 5” Artisan Prep knife is by far the sharpest knife I’ve ever used. The size is perfect - smaller than a chef’s knife and larger than a paring knife. I can see myself using this knife every day! And it’s beautiful!
So obsessed with my new knife. The size filled a gap in my knife needs that I never knew I had. Cuts beautiful and looks amazing.

I LOVE this Artisan knife. It's one of my other favorites in this Miyabi line. The knife is expertly balanced and weighted with a comfortable, bellied handle. The hammered steel is incredibly sharp and seamlessly cuts through anything.

Prep knife for any prep work

I noticed Miyabi started to offer prep knives in most of their lines. It has become my new favorite. It's larger than a paring but smaller than a chef. The blade is a little wider so you can use it on a cutting board and your knuckles do not hit the board. This Artisan is awesome. So sharp and comfortable.

Prep knives are perfect for a quick cut here and there. They also are great for any young person learning how to hold a knife in a pinch grip - its the perfect learning size. This one is made form SG2 steel which produces scalpel like blades.
