I’ve been using the ZWILLING 7-inch Chinese Chef’s Knife (vegetable cleaver) for a while now, and it’s easily become one of my most-used tools in the kitchen.
First thing to understand: this is not a bone-chopping cleaver. It’s a Chinese-style vegetable cleaver, and that’s exactly where it shines. For slicing vegetables, mincing garlic, shredding herbs, and even handling boneless meats, it’s incredibly efficient. The wide blade gives you a lot of control and also doubles as a scoop to transfer ingredients from the cutting board to the pan — something I didn’t realize I’d appreciate this much until I started using it.
The balance is excellent. It feels substantial without being heavy, and the weight actually helps with clean, smooth cuts. The edge came razor-sharp out of the box and has held up well with regular home use. With proper care and occasional honing, it stays consistently sharp.
The handle is comfortable and secure, even during longer prep sessions. It has that classic ZWILLING build quality — nothing flashy, but very solid and reliable.
A couple of things to keep in mind: because of the blade height, it may feel a bit intimidating at first if you’re used to Western chef’s knives. Also, it’s not designed for hard impacts like cutting through bones — misuse it that way and you’ll damage the edge.
Overall, if you cook a lot of vegetables or do Chinese-style prep, this knife is a fantastic upgrade. It’s versatile, well-built, and once you get used to it, you might find yourself reaching for it over your regular chef’s knife most of the time.
