Zwilling knives have it all. This is the 7th Z knife I have and they are consistently excellent. Sharp, and stay sharp. High quality materials. Lightweight and balanced. Makes prepping everything from vegetables to meat enjoyable and easy. Not cheap, but you definitely get what you pay for with Z knives....that's why this is #7!
