This Miyabi Koh 10 piece block set was a wedding present from my best friend. Great choice. Always wanted a set of Japanese knives. These knives made in Seki Japan are produced by machine and also with the help of Japanese artisans who have passed down their skills from generation to generation The FC61 steel makes all the difference in the world. It is extremely hard, which keeps the blades sharp, but resistant to chipping and scratching which is known to happen with other Japanese steels. The Asian angel, between 9.5 and 12 degrees depending on the knife, helps make these knives extremely sharp and perfect for the most precise cuts and slices. The traditional D shaped handle is made from pakkawood, which feels luxurious in the hand, and completes the authentic design. These knives make the perfect gift, an investment in our lives and our relationship which means the world to us.
[This review was collected as part of a promotion.] I am thrilled to finally have a set of professional knives!! I am an avid cook and baker and having quality knives makes slicing and dicing a pleasure rather than a chore:) also they are beautiful!!!. You will love your new set of knives!! I have the magnetic board to store them and keep them sharp. The set comes with a knife sharpener and kitchen scissors.
I love this new Koh line. The handles are very light and comfortable to hold. I like the hexagonal design over the traditional Japanese D shaped handle. The craftsmanship on the blades is excuisite. The FC61 steel is super sharp and resistant to chipping unlike many other harder steels. The acute Japanese angle of the blade give nice thin slices and cuts. The traditional methods used in making these knives really makes a difference. The Honbazuke hand sharpening produces an amazing blade edge. The traditional Katana style watermarking above the blade edge shows the attention to detail and tradition. This is a very complete set providing everything needed from prep knives all the way up to a nice long slicer and bread knife.
I am so happy that Miyabi has a way to display these knives so that you can see the beautiful craftsmanship that they put into creating their knives and especially their blades. This set of knives is also great because it includes both a chef's knife and santoku because I like to use both of those interchangeably. I also like how the bread knife is 9" instead of 8" so that it can get through larger loaves. The handle is comfortable to use with it's octagonal shape.
Fine carbide steel hand-honed in Seki, Japan...famous for samurai sword-making. Wonderful assortment of knives, nice in-hand feel, mid-weight and an attractive bamboo magnetic easel complete package.
Miyabi Koh is one of my favorite of the Miyabi line. This set has all the knives you need to accomplish any task in the kitchen. I especially like that a santoku knife in included in the set, as it is one of my most used knives. The santoku can be used for meat, poultry and vegetables and feels great in my hand. The block is stunning as well and looks fantastic on my kitchen counter.
The Miyabi Koh knives are a contemporary modified version of traditional Japanese cutlery. the handles fit comfortably in either left or right hands and the blade is thin, very sharp and consistent.
This is a beautiful set that you will have for a lifetime and will pass on to others. This Miyabi line is beautiful and boasts a scalpel-like blade. It is presented on a magnetic board sure to impress your guests. This is an investment you won't regret.
