This is a great knife, very sharp. It’s nice to finally get good knives. We have bought other brands and after a few years we have thrown them out.

This knife is in a class by itself, it has made trimming briskets for our shop an actual dream rather than a chore!

This is my first "professional" knife I've ever purchased and used in my own time. It has been extremely clean cutting through the NY Strips and Sirloins I've been doing at home. Perfect for buying in bulk somewhere and cutting it up and trimming yourself. Knife is also extremely comfortable in either hand which is a huge plus since I'm ambidextrous and switch sometimes.
I would recommend this to a friend!
