You have to hold it down or the egg runs underneath and out the mold.

Love the omelet ring. Especially considering the "levelness" of the griddle. My scrambled eggs end up running to the rear of griddle immediately. So, the omelet ring is nice to keep things centrally located. Fried eggs are just as easy without the smaller rings. I guess they would be most beneficial for sunny side up eggs or eggs benedict.
